MEET THE ARTISAN

In Da Sar, Lac Duong, Lam Dong, at 1,450 to 1,600 meters, Catimor and Typica selections ripen slowly in cold air.

The farm stays with fully washed processing, the style with the least room to hide, and looks for complexity in fermentation time rather than in ferment character.

THE VISION

The intent is precise: dried fig as mellow sweetness, toffee filling the centre, dark chocolate deepening the finish, roasted almond for a clean nutty edge.

THE MASTERY

Cherries are depulped and taken through an extended 24-hour washed fermentation, longer than the regional norm, then rinsed thoroughly and dried under control so the sugars develop without tipping into funk.

  1. Rinse the paper filter and add 20 g of medium grounds.
  2. Bloom with 50 ml at 93°C for 40 seconds.
  3. Pour in slow spirals to 320 ml in two or three pulses.
  4. Aim to finish the drawdown around three minutes.
