MEET THE ARTISAN

In Pong Drang, Krong Buk, Dak Lak, at 650 to 800 meters, whole-cherry drying is the oldest method on the farm and the easiest one to do badly.

The garden keeps it deliberately restrained, aiming for dried-fruit sweetness rather than the loud ferment that natural lots are often sold on.

THE VISION

The intent is precise: golden raisin as a soft fruit note, molasses deepening the sweetness, cocoa for structure, toasted walnut closing dry and nutty.

THE MASTERY

Cherries are sorted at full ripeness and dried whole on patios in thin layers, turned often and pulled from harsh afternoon heat, with any fruit drying out of rhythm removed by hand.

  1. Rinse the phin with hot water and add 25 g of medium-coarse grounds.
  2. Press the gravity filter down lightly — firm, not packed.
  3. Bloom with 20 ml of water at 92–94°C and wait 30 seconds.
  4. Top up to 100 ml, cover, and let it drip for three to five minutes.
