MEET THE ARTISAN

In Loc Chau, Bao Loc, Lam Dong, at 850 to 1,000 meters, Original Robusta grows dense and heavy.

The farm treats that weight as the point rather than a problem to correct, and builds the lot toward a custard-like memory instead of chasing brightness it was never going to have.

THE VISION

The intent is precise: caramel custard, vanilla bean softening the edges, toasted sugar for depth, cacao finishing dry and clean.

THE MASTERY

Cherries are depulped for a yellow honey process, keeping a lighter layer of mucilage, then dried in a greenhouse where shade and airflow can be adjusted and the layers turned often until moisture is even through the seed.

  1. Rinse the phin with hot water and add 25 g of medium-coarse grounds.
  2. Press the gravity filter down lightly — firm, not packed.
  3. Bloom with 20 ml of water at 92–94°C and wait 30 seconds.
  4. Top up to 100 ml, cover, and let it drip for three to five minutes.
