MEET THE ARTISAN

In Thuan Chau, Son La, at 1,000 to 1,200 meters, Catimor ripens in cool northern air that gives crisp fruit acidity without much weight.

The cooperative leans into that rather than roasting it away, keeping the lot light medium so the structure survives.

THE VISION

The intent is precise: baked apple starting the sip, cinnamon sugar for warmth, caramel through the middle, black tea keeping the finish polished and easy to drink.

THE MASTERY

Cherries are depulped and fully washed under controlled fermentation, with the timing held tight to protect crisp fruit and keep sweetness restrained, then dried evenly before resting.

  1. Rinse the paper filter and add 20 g of medium grounds.
  2. Bloom with 50 ml at 93°C for 40 seconds.
  3. Pour in slow spirals to 320 ml in two or three pulses.
  4. Aim to finish the drawdown around three minutes.
