In Tan Nghia, Di Linh, at 1,100 to 1,300 meters, Lan works a Catimor-Yellow Bourbon cross at an elevation that produces ripe stone-fruit character without the high-altitude austerity.

THE VISION

Ripe cherries are depulped and left with full mucilage for a 72-hour honey ferment in open-air tanks, then moved to raised beds where shade cloth and turning schedules are adjusted daily to keep drying even and slow.

  1. Rinse the paper filter and add 20 g of medium grounds.
  2. Bloom with 50 ml at 93°C for 40 seconds.
  3. Pour in slow spirals to 320 ml in two or three pulses.
