BY THE NUMBERS
Cherries are floated, sorted by density, and dried whole on raised beds in open shade for thirty days, turned at least twice a day so the drying is even and no spot traps moisture.
For Hoa, specialty coffee is the belief that thirty days of care cannot be faked and cannot be rushed.
