MEET THE ARTISAN

In Lac Duong, Lam Dong, at 1,400 to 1,600 meters, Long works a Bourbon-Catimor selection in a greenhouse drying facility he built over three years to give him control over airflow and humidity that open-air beds cannot.

THE VISION

Cherries are depulped and retained with an orange-honey mucilage, then moved to the greenhouse where shade cloth, ventilation and turning schedules are adjusted daily to keep the drying even and slow.

  1. Rinse the paper filter and add 20 g of medium grounds.
  2. Bloom with 50 ml at 93°C for 40 seconds.
  3. Pour in slow spirals to 320 ml in two or three pulses.
  4. Aim to finish the drawdown around three minutes.
