BY THE NUMBERS
Cherries are hand-picked at full ripeness, floated, and put through a 48-hour washed fermentation in tanks checked daily for temperature and pH. After washing they move to raised beds where slow drying and continuous turning build even moisture and protect the jasmine-fruit arc.
For Mai, specialty coffee is the belief that Vietnamese Arabica is still capable of surprising people who think they already know what it tastes like.
