BY THE NUMBERS
Ripe cherries are floated and depulped with mucilage left on, then sealed for a 60-hour anaerobic honey ferment before drying on raised beds, turned often so the coconut-mango sweetness concentrates without souring.
For Thao, specialty coffee is the belief that a dessert in a cup still has to be a serious coffee first.
