MEET THE ARTISAN

On the Lang Biang slopes of Lac Duong, at 1,500 to 1,650 meters, Thao runs a Typica-Bourbon selection through an anaerobic honey process to push coconut and tropical sweetness forward in Arabica.

THE VISION

Ripe cherries are floated and depulped with mucilage left on, then sealed for a 60-hour anaerobic honey ferment before drying on raised beds, turned often so the coconut-mango sweetness concentrates without souring.

THE MASTERY

For Thao, specialty coffee is the belief that a dessert in a cup still has to be a serious coffee first.

  1. Rinse the paper filter and add 20 g of medium grounds.
  2. Bloom with 50 ml at 93°C for 40 seconds.
  3. Pour in slow spirals to 320 ml in two or three pulses.
  4. Aim to finish the drawdown around three minutes.
