At Cau Dat Heights in Xuan Truong, Da Lat, at 1,450 to 1,600 meters, Vy works a Bourbon-Catuai selection at an altitude that gives Arabica the bright citrus lift this cup is built on.

THE VISION

Ripe cherries are hand-picked, floated, and put through a 40-hour washed fermentation in temperature-checked tanks, then dried slowly on raised beds and turned often so the citrus clarity and creamy body both survive to the cup.

THE MASTERY

For Vy, specialty coffee is the belief that a cup can be bright and comforting at the same time.

  1. Rinse the paper filter and add 20 g of medium grounds.
  2. Bloom with 50 ml at 93°C for 40 seconds.
  3. Pour in slow spirals to 320 ml in two or three pulses.
  4. Aim to finish the drawdown around three minutes.
