MEET THE ARTISAN

In Cu M'gar, Dak Lak, at 500 to 650 meters, Original Robusta is grown at scale and usually judged by the sack.

The lots behind this coffee are pulled aside and handled to a cleaner standard than the commodity line they came from, for a cup people reach for without thinking.

THE VISION

The intent is precise: caramel and milk chocolate doing the work, red apple for lift, toasted almond keeping the finish warm and familiar.

THE MASTERY

Ripe cherries are depulped and fully washed, fermented under control and rinsed clean, then sun dried and turned until moisture is even, a process chosen for clarity rather than for character added in the tank.

  1. Rinse the phin with hot water and add 25 g of medium-coarse grounds.
  2. Press the gravity filter down lightly — firm, not packed.
  3. Bloom with 20 ml of water at 92–94°C and wait 30 seconds.
  4. Top up to 100 ml, cover, and let it drip for three to five minutes.
